We strive to make Perry and Cider that expresses the best qualities of the Asian and European pears and heirloom apples that we grow and source. We carefully control fermentation to preserve some of the natural sweetness, use 100% juice pressed at our winery and do not add sugar or flavorings. Yes, we are purists.

A blend of organically grown Newtown Pippin and Calville Blanc d’Hiver apples. bright acidity with notes of apricot. 6.9% abv.
“Fresh Squeezed” DRAFT CIDER
Blanc de Newtown blended with freshly pressed island grown Dolgo Crab, Gavenstein, Almata and Weatly apples. Easy drinking and juicy. 6.2% abv.
IDYLL ACRES BITTERSWEET CIDER
Winner BEST IN CLASS, TRADITIONAL DRY CIDER, 2019 GLINTCAP
A blend of 100% traditional English and French varietit3ees grown by Idyll Acres near Salem, Oregon. Classic “cidery” aromas and notes of black tea lead to balanced round flavors of red apple with soft tannins. 7.3% abv.
Manchurian Crabapple cider fortified with brandy and aged in neutral French oak barrels for 18 months. Blended with fresh Kingston Black apple juice. Warming, smooth after dinner sipper. 20.3% abv.

Serving Our Perry and Cider
For the best experience, keep cool and serve chilled similar to white wine. We do not filter or pasteurize our Perry, which may result in a small amount of natural sediment in the bottle. This is normal. We recommend that you pour it into a wine glass and enjoy.
OUR FAVORITE PAST VINTAGES
Winner of a Gold Medal, Heritage Cider at 2019 GLINTCAP
A blend of 100% Vashon Island grown apples. Foraged and donated from orchards across the island, this dry cider is very drinkable with notes of stone fruit. Each year a portion of the proceeds go to a local non-profit. 6.9%abv
HOSUI ASIAN PEAR PERRY
Organically grown Hosui and Ichiban nashi were cryo-concentrated prior to fermentation to boos acidity. English perry pears were blended for tannins and complexity. Wine-like with flavors of pear and baked apple. Balanced, slightly sweet with pleasant long, dry finish. Available in 4-packs and 750ml bottles. 6.9% abv
“WHITE HART” DRAFT CIDER
Cider is a blend of 50% Golden Russet, 30% Ashmeads Kernel and 20% mixed aromatic apples. Aged in “Big Gin” barrels for 5 months. Notes of juniper, pine, and peppercorn. Dry. Available in growlers or by the glass. 8.3% abv
Port-style cider made with 100% Manchurian crabapple cider fortified with eau de vie and aged in French oak for 18 months. Flavors of dried apple, figs and almonds with solid acidity make this a favorite winter warmer. 19.5% abv. Available in 375ml bottles at the orchard. Only 60 gallons produced.
HOODED MAN CIDER
Manchurian crabapple cider aged for 18 months in stainless prior to blending. 40% Hood River, OR blend of Newtown Pippin, Jonagold and Lady apples were added for aromatics and mid-palette complexity. Citrus skin nose with pleasant funk leads to red fruit flavors and a long baked apple finish. Assertive tannins and brisk acidity provide structure and bite. 8.9% abv. Available in 375ml bottles at the orchard.
WHITE HART CIDER
A cider made with a blend of 20+ varieties of American heirloom apples, crabapple and cider apples aged in a "Big Gin" peated gin barrel for 7 months. A nod to London UK. Dry and aromatic with only 20 cases produced. 7.2% abv. Available in 375ml bottles at the orchard.
TAYLORS GOLD PERRY
This russetted heirloom pear underwent an extended maceration and fermentation on the skins to create a medium sweet perry. Organically grown in Sedro Wooley. Very juicy with a solid backbone of acidity and notes of baking spices. 6.6% abv. Available in 375ml bottles at the orchard.
IMAMURA AKI ASIAN PEAR PERRY
This late season heirloom pear produces a balanced and fruity perry with flavors of pear and melon. The addition of traditional English perry pears provides structure and richness. 6.7% abv. Available in 200ml bottles and 4-packs at the orchard and at our retail partners.
ISLAND HARVEST PERRY
Winner of a Bronze Medal in the 2016 GLINTCAP international Perry and Cider competition.
Island Harvest Perry features our Shinsseiki and perry pears as well as seedling pears foraged on Vashon Island. This perry captures the taste of a fall orchard with dry, fruit forward pear flavor, pleasant, soft tannins and a long finish. The bright acidity, effervescence and residual sweetness make it a great partner for lamb, salmon and spicy foods.
ISSHO NI or “TOGETHER” CIDER
This Cider is from our Vashon Island Cider Collaborative.
Our island neighbors donated their excess apples to help us create this special cider. A portion of the proceeds will be returned to the island with a donation to Vashon Island Land Trust. In this way, the island community is truly coming together, or in Japanese, “issho ni”. The apples were pressed in December, fermented over the winter and matured in stainless steel. The result is an effervescent dry cider with hints of apricot and stone fruit.
IHENDRE HUFFCAP PERRY
Winner of a Silver Medal in the 2016 GLINTCAP international Perry and Cider competition.
A vintage perry pear originally from England. Huffcap is fruity with notes of apricot and citrus with soft tannins and medium body. Lightly sparkling with good acidity.
A blend of Hosui Asian pear, Jonathan apples and Smyrna quince. A note to the appelwine of Germany and Sidra of Spain. Rustic and aromatic with pleasant lingering tannins. 6.6% abv
Dabinett and Winter Banana apples fermented dry. Classic English bittersweet cider character. 6.9% abv
BLACK SWAN "DRAFT ONLY" CIDER
Heirloom apple cider aged in Woodinville Whiskey Rye barrels for 6 months. Apple forward and semi-sweet with notes of vanilla, oak and grains. Growlers available for on site fills. 8.3% abv
Fortified Bartlett pear perry aged in French oak since August 2016. Summery, and sweetly refreshing with pear and tropical fruit flavors and notes of vanilla. Enjoy over an ice cube or in your favorite cocktail. 16.2% abv
